Uncle Jimmy’s Ribs

2 Slabs Baby Back Ribs
1 Cup BBQ Sauce – your favorite
1 tsp Texas Pete
1 1/2 tsp Lemon Juice 

Remove membrane and wrap ribs in heavy duty foil

Place in cold oven and turn on 400 for 1 1/2 hours

Combine BBQ Sauce, Texas Pit and Lemon Juice

Unwrap ribs and baste meat side with sauce

Place on medium heat grill and baste bone side

Flip and baste every 10 minutes for 30 minutes

Cole Slaw

1 small head cabbage

1/4 cup cider vinegar

1/4 cup mayonnaise

1 tablespoon sugar

1/2 tablespoon black pepper

1 teaspoon salt

PREPARATION

Shred cabbage

Combine all other ingredients

Mix all and chill 2 hours or overnight

Baby Back Ribs

3 slabs baby back ribs

1/2 cup dry bbq rub

1 cup bbq sauce

Remove membrane from ribs

Message rub into ribs on both sides

Wrap each slab tightly in plastic wrap and then in foil

Refrigerate 8 hours or overnight

Leave wrapped and place on sheet pan

Bake 250 for 4 hours

Remove from oven and carefully unwrap

Place on grill – medium direct heat

Flip and baste often with bbq sauce for 30 minutes

4 – 6 servings

Easy and delicious slow smoked/grilled (indirect heat) for 5 hours

Baste during the last hour

Remove wrap before smoking/grilling

BBQ Rub

1/4 c paprika

2 T brown sugar

2 T onion salt

2 T blk pepper

2 T garlic powder

1 t cayenne – to taste

2 t cumin

2 t chili powder

2 t lemon pepper

Mix all and keep in air tight container

BBQ SAUCE

1 c ketchup or tomato sauce

1/4 c cider vinegar

1/4 c water

1/4 c worcestershire sauce

a dash liquid smoke

1 T mustard

1/4 c brown sugar

1/4 c honey

1/4 c dry rub

Mix and heat over med – low heat stirring occasionally for 30 minutes

Smoked Bologna

1/2 stick bologna (approx 7 lbs)

1 cup mustard

1/2 cup dry rub

1/2 cup brown sugar

 

Score bologna with 1/4 in slits

Smear mustard all over bologna

Mix dry rub and brown sugar together

Spread evenly over bologna

 

Smoke, Slow cook with indirect heat or bake in oven

275 – 325 for 5 - 8 hours

Low Country Shrimp Boil

Shrimp Boil

Crab and Shrimp Boil – liquid or dry seasoning

1/4 lb shrimp per person

1/4 lb sliced smoked sausage per person

2 – 3 small red potatoes per person

1 ear of corn per person

1 onion – quartered

2 lemons – 1 sliced and placed in boil and 1 for juice over finished boil

In large pot of water add shrimp boil, onion, lemon slices and smoked sausage

Boil 15 – 30 minutes

Add potatoes

Boil 5 – 10 minutes

Add Corn

Turn heat to low simmer for 5 minutes

Add Shrimp

Cover and turn off heat

Allow shrimp to steam 5 – 10 minutes until opaque – done – Do Not over cook shrimp

Drain and pour into large bowl

BBQ Nachos

Tortilla Chips

Pulled Pork or chicken

Refried Beans – homemade

BBQ sauce

Pepper Jack Cheese Sauce

BBQ Rub

Sour Cream w/Cilantro

Jalapeno Pepper Slices

Black Olive Slices

Green Onion Slices

Spread chips on platter

Heat and layer meat, beans, bbq sauce and cheese

Sprinkle with bbq rub

Garnish with sour cream, peppers, olives and onions

 

 

Baked Beans

1 lb ground chuck

1 onion – diced

1 bell pepper – diced

4 cloves garlic – chopped

2 -16.5 oz cans baked bean

1/2 cup brown sugar

1/2 cup bbq sauce

1 T dry mustard

1 T hot sauce

1 T worcestershire sauce

1 t cumin

1 t black pepper

1 t salt

Cook meat, onion, bell pepper and garlic

Drain

Mix all ingredients

Bake 350 uncovered 30 minutes

Stir and bake another 30 minutes

BBQ Sauce

Mississippi Pulled Pork BBQ

Perfect Pulled Pork BBQ

6 – 8 lb Boston Butt Pork Shoulder Roast

1/2 cup Dry Rub

1/2 cup apple cider vinegar in spray bottle

2 cups BBQ Sauce

 

Trim visible fat from pork

Sprinkle dry rub over pork messaging it into the meat

Refrigerate over night

Bake 8 hours on 275

Last hour of baking prepare grill/smoker (250 – 300) for indirect heat/smoke

Hickory, pecan or apple wood works best – if no wood – charcoal is ok

Place Butt on grill and smoke 4 – 6 hours – spraying every 30 minutes with vinegar

Jiggle the bone and if it moves easily or comes out – the Butt is done

Carefully remove meat from grill – careful it might fall apart

Pull/shred the meat

Pour on BBQ Sauce and toss

Serve on buns with cole slaw

BBQ Spaghetti

1 lb cooked pasta

1 lb pulled pork bbq

2 cups bbq sauce

1/2 T bbq rub

1 onion

1/2 bell pepper

1 T chopped garlic

Saute onion, bell pepper

Add garlic and bbq sauce

Simmer 30 minutes

Add pulled pork

Simmer 30 minutes

Sprinkle with rub

Toss with cooked spaghetti
